We're making these tonight. These are one of our very favorite desserts. We usually make our own cookies, but right now, simplicity is key. And I taste tested those waffle cookies and they pass. Happy Easter!

These look gourmet! I am tucking this away for when the weather finally turns nice--it is still a grey, drab wintewonderland here. Someday we need to get to a place that it is actually spring at Easter.
